HEIC and HEVC are lossy, like the JPEG and H.264 they replace, and they store detail more efficiently. Most photos look the same, but fine texture or text can differ slightly. That’s why you can compare every copy before saving it, and why your original stays until you choose.
It depends on your library. Camera photos typically come out nearly half the size, some even smaller, and older videos often save more. Photos that were already compressed, like ones saved from messages, save less, and some aren’t worth converting at all. Reductio measures a sample on your device first, for free, so you know before you change anything.
Removed originals go to Recently Deleted in Photos. Photos frees the space when you empty it, or after about 30 days, and syncs the change with iCloud Photos.
